This is a traditional English dish.

Quantities are for 6 servings.

75 g
Traidcraft FAIRTRADE caster sugar

double cream

Method

Preparation

Evening of the day before dinner.

Zest and juice the lemon, discarding the pith and seeds.

Mix the lemon juice and rind with the wine, sugar and rum in a bowl. Allow to infuse overnight.

Morning of the dinner day.

Add the cream and whisk until the mixture just holds the shape of whisking. (Do not over-whip).

Turn the mixture into glass dessert bowls and chill in the refridgerator from morning until dinner.

To serve

Serve as a cool dessert.

The rum is an optional extra.
