Salsa Verde - Green Sauce

A sharp garlicky sauce to go with Italian Bollito Misto.
Ingredients
5
anchovy fillets
15 ml
capers
2
cloves garlic
5 ml
mustard
15 ml
FAIRTRADE lime juice
75 ml
Zaytoun FAIRTRADE olive oil
salt and pepper
1 bunch
fresh mint
1 bunch
fresh parsley
5 ml
dried basil
Method
Preparation
Chop the anchovy fillets small and then crush in a mortar.
Wash the vinegar off the capers, dry them and cut tiny. Add to the anchovies.
Peel and crush the garlic and add to the mix.
Add the mustard.
Add the lime juice and some ground black pepper.
Mix well.
Finely chop the herbs with one of those two handled knives.
Adjust the seasoning and add the herbs. Mix well and serve.
To serve
Chill before serving.
