Cucumber Raita

This dish is used as a complement to food containing hot spices, it is beautifully cool.

Ingredients

cucumber
1 carton
natural yoghurt
2
Pinches of Fair Trade dried mint

Method

Wash the cucumber, and discard the top and tail, and then chop into quite small pieces.

Place the chopped cucumber in small serving bowl and add the chilled yoghurt.

Gently mix so that all of the cucumber pieces are covered in yoghurt.

Sprinkle a little dried mint on top.

To serve

Chill before serving.

Variation

1) A little chopped apple makes a nice variation.

2) Substitute a small red onion for the cucumber. This variation keeps much better in the fridge.
