Nicaragua Salad

Serves two.

Ingredients

1 can
FAIRTRADE red kidney beans
100 g
frozen green beens
50 g
cabbage leaf
3
medium tomatoes
Dressing:
30 ml
sunflower oil
30 ml
cider vinegar
15 g
FAIRTRADE sugar

Method

  • Rinse the beans and out into a bowl.
  • Defrost the green beans and add to the kidney beans.
  • Chop the cabbage into bean sized portions.
  • Chop the tomatoes into bean sized portions.
  • Add the cabbage and tomatoes to the beans.

Mix the oil, vinegar and sugar in a shaker and pour over the beany mix. Chill.

To serve

Serve with chimichurri sauce.
