Marmalade Cake

A simple English cake with the tang of marmalade.

Ingredients

125 g
butter
125 g
FAIRTRADE caster sugar
2
hens eggs
2 heaped tablespoons
FAIRTRADE marmalade
125 g
plain flour
3 ml
baking powder
generous pinch

Method

Preparation

Grease a cake tin. Pre-heat the oven to gas mark 5 (190 °C; 375 °F).

Baking

Cream together the butter and the sugar in a large mixing bowl.

Beat the eggs in a separate bowl then mix in to the butter and sugar. Add the marmalade and mix well.

Fold in the flour, baking powder and salt. Beat well.

Spoon the cake mix into a greased cake tin and bake in the middle of the oven at gas mark 5 (190 °C; 375 °F) for about 1 hour.

To serve

Let it cool first.

Variation

You can substitute FAIRTRADE fresh or dried fruit in place of the marmalade to make a variety of fruit cakes. Addition of FAIRTRADE cocoa powder and small pieces of FAIRTRADE chocolate makes a simple chocolate cake.
