Goji berry and sultana cookies

Tasty fruit in an oaty biscuit.

Inspired by: BBC books' “101 Cakes and Bakes”.

This is an English confection created for the Book Club meeting.

Ingredients make about 25 cookies.

This recipe contains the following types of ingredient: dairy and honey; plants and fungi.

Ingredients

100 g
goji berries
100 g
Fairtrade sultanas
50 ml
Madeira or Fairtrade orange juice
250 g
butter
75 g
FAIRTRADE caster sugar
75 g
FAIRTRADE muscavado sugar
150 g
self-raising flour
225 g
porridge oats

Method:

Pre - Preparation

Mix the goji berries with the sultanas and add the madeira. Set aside for a couple of hours.

Pre-heat the oven to gas mark 4 (180 °C; 350 °F).

Line a couple of baking trays with non-stick baking parchment.

Preparation

Beat together the butter and the sugars, and then mix in the flour and the porridge oats.

Once they are well combined, tip in the fruit and turn to make an even mixture.

Divide the mixture into 25 equal portions, and make each portion into a sphere.

Put the spheres on the baking trays, well-spaced, and just flatten a little with your fingers.

Cooking

Bake in the oven for 20 - 30 minutes or until the edges are golden brown and the centre still soft to the touch.

Cool for 5 minutes on the tray and then transfer the cookies to a wire rack to finish off.
