Cucumber Salad with yogurt, a sort of European take on raita.

This recipe contains the following types of ingredient: dairy and honey; plants and fungi.

Ingredients

medium cucumber
1
clove garlic
15 ml
salt
15 ml
vinegar
200 ml
natural yoghurt
15 ml
Zaytoun FAIRTRADE olive oil
20 ml
chopped fresh parsley

Method

Assembly

Crush the garlic into a dish and add salt and vinegar and mix to a smooth paste.

Stir this into yogurt; add the oil and half of the parsley.

Peel and slice cucumber into small chunks.

Put the cucumber into a salad bowl and sprinkle with a little salt.

Cover with the yogurt sauce and sprinkle the rest of the parsley on top.

To serve

Chill before serving

Variation

Other herbs can be used in place of the parsley.
