Christmas Muffins

This recipe is for muffins suitable for Christmas morning breakfast. It was inspired by a muffin recipe from "How to be a domestic goddess" by Nigella Lawson.

Makes 12 normal sized muffins.

Special equipment: 12-place muffin tray; 12 normal-sized muffin cases.

dried cranberries
50 ml
FAIRTRADE rum or orange juice
360 g
plain flour
3 tsp
baking powder
1 tsp
bicarbonate of soda

FAIRTRADE demerara sugar
large pinch
grated nutmeg
150 ml
FAIRTRADE orange juice
90 ml
milk
120 g
unsalted butter
2
eggs
Topping
2 tsp
FAIRTRADE demerara sugar
1/2 tsp
FAIRTRADE ground cinnamon

Method

Soak the dried fruit in the rum / orange juice overnight.

Pre-heat the oven to gas mark 6 (200 °C; 400 °F).

In a large bowl, combine the flour, baking powder, bicarb and sugar. Grate over some nutmeg.

Mix the orange juice and milk in a measuring jug.

Melt and add the butter and the eggs, and beat to combine. Pour the liquid ingredients into the bowl and stir to mix.

Fold in the dried fruit.

Pour the mixture into the cases. Mix the topping ingredients and sprinkle on top.

Bake for 20 minutes. Serve warm or cooled.
