Chickpeas, Apple and Leek Salad


Very nice salad. Claimed for England.

This recipe contains the following types of ingredient: plants and fungi.


125 g
dry chickpeas
15 ml
Zaytoun FAIRTRADE olive oil
15 ml
FAIRTRADE lemon juice
sea salt and freshly ground FAIRTRADE black pepper
medium leek
FAIRTRADE eating apples, washed, cored and chopped


Soak the chickpeas overnight in cold water and then cook in the usual way.

Drain and allow to cool.

Add the apples to the chick peas together with the lemon juice and oil.

Wash the leeks carefully, then cut into rings using all the white part and as much of the green as you can.

Slice the tomato.

Add the leek and tomato to the chickpea mixture, season and serve on a bed of lettuce.

To serve

Serve chilled
