Chicken Parcels


Chicken breasts stuffed with goats cheese and wrapped in bacon.

This is an Italian dish.

The cheese melts in the cooking leaving a subtle flavour, whilst the bacon protects the chicken making it deliciously tender.

Serves 2.

This recipe contains the following types of ingredient: meat and poultry; dairy and honey; plants and fungi.


large boneless chicken breasts
rashers bacon
60 gm
goats cheese
a touch
Zaytoun FAIRTRADE olive oil
to taste
FAIRTRADE freshly ground black pepper



This can be prepared ahead of time and kept in the refridgerator for up to 36 hours.


Divide the chicken breasts lengthways.

Using a small sharp knife make a pocket within each chicken breast piece.

Slice the cheese and insert into the pocket.

Wrap each chicken breast piece in a rasher of bacon.

Place the parcel of chicken and cheese in a lightly oiled shallow casserole dish.

Add a grind of pepper.


Cook in the oven at gas mark 5 (190 °C; 375 °F) for 30 minutes.

Turn to expose the underside to the heat, and bake for a further 30 minutes.

To serve

Serve hot from the casserole dish with seasonal vegetables.
