Carroty Orange Salad

“Good for you” carrots with a tangy taste.
This is a Fairtrade rework of a recipe from the Moosewood Low-Fat Cookbook.
Ingredients
4
medium organic carrots
2
large juicy FAIRTRADE oranges
1
FAIRTRADE lemon
2.5 ml
FAIRTRADE ground cinnamon
15 ml
FAIRTRADE runny honey
Method
Peel and grate the carrots into a bowl.
Peel the oranges and divide the segments into quarters (a quarter will have 2 or 3 segments stuck together lengthwise). On a plate to catch any juices, cut each quarter crosswise into 5 mm slices. Add the oranges and juice to the carrots.
Juice the lemon. Mix the lemon juice, cinnamon and honey in a dressing shaker, and shake well.
Pour the dressing over the carroty oranges and mix well.
Chill and serve.
