Ingredients

medium to large organic carrots
100 g
FAIRTRADE sultanas
60 ml
FAIRTRADE orange juice
5 ml
FAIRTRADE sugar

Method

Preparation

Wash (if necessary), top, tail, peel and grate the carrots into a bowl.

Assembly

Add the sultanas and orange juice.

Add sugar as necessary to taste.

To serve

Chill for 1 hour before serving.

Variation

Use FAIRTRADE Tropical Forest honey in place of sugar for a smokey flavour.

Substitute raisins for sultanas if necessary.

The inclusion of a tin of cooked chick peas (drained) adds protein, crunchier texture and bulk, and turns this into a dish to complement some early season rocket leaves.
