Bulgar Wheat Pilaf

Simple side dish, serves 4.

Ingredients

200 gm
medium bulgar wheat
500 ml
veggie stock
2
celery sticks
2
medium carrots
2
medium onions
1
FAIRTRADE lemon

Method

Preparation

Prepare the celery, carrots, and onions in the usual way, chopping fairly small.

Cooking

Heat the stock in a saucepan until boiling, add vegetables, cover and simmer for a few minutes (5 minutes is fine).

Add the bulgar wheat, bring back to boil, cover and simmer for a further 15 minutes (take care not to lose all the liquid too soon).

Add the juice of half of the lemon, and also salt and pepper to taste, turn gently.

Turn off the heat, re-cover, and allow to stand 5 more minutes.

To serve

Serve hot as a side dish.

Variation

Vary the vegetables according to what is to hand.

Add 50 gm of frozen peas (unfreeze with hot water) for extra colour.

Add 5 ml ground coriander and 5 ml ground ginger to the pot for a spicier result.
