Banana Bread

The best possible use for very ripe bananas (apart from making wine which takes a lot longer). FAIRTRADE bananas are widely available in the UK.

We think that Costa Rica is the home of Banana Bread.

Ingredients

FAIRTRADE ripe (spotty) bananas
200 g
FAIRTRADE caster sugar
150 g
butter
2
hens eggs
50 ml
natural yoghurt
225 g
plain flour
5 ml
baking soda
50 g
chopped FAIRTRADE walnuts
50 g
chopped FAIRTRADE cashew nuts
50 g
chopped FAIRTRADE brazil nuts
generous splash
FAIRTRADE rum

Method

Preheat the oven to gas mark 4 (180 °C; 350 °F).

Mix together into a smooth paste the butter and the sugar.

Mash in the bananas.

Mix in the remaining ingredients.

Pour into a greased bread tin.

Bake for 90 minutes.

NB. Even if a testing needle comes out clean, give the loaf the full 90 minutes.

To serve

Serve cool, in slices with butter.

Variation

Vary the nuts according to what is in hand.
