A simple, high flavour sauce for traditional English fare.

Ingredients

300 ml
balsamic vinegar
15 ml
FAIRTRADE ground cinnamon
5
FAIRTRADE whole cloves
15 ml
FAIRTRADE honey
FAIRTRADE

Method

Cooking

Combine the ingredients in a saucepan.

Heat to boiling and then reduce to a simmer for 20 to 30 minutes. The sauce is ready when the volume is reduced by about half.

To serve

Serve with puy lentils, or with high flavour meats such as duck.

This sauce could also be used with Bollito Misto.

Variation

French / Canadian variations seem to use a grated (small) onion and a little (5 ml) Dijon mustard, but no spices or honey.
