Tiny but versatile and nutritious seeds. See Amaranth in Wikipedia.

200 gm
amaranth seeds
400 ml
FAIRTRADE apple juice
50 ml
FAIRTRADE white wine

Pour the amaranth seeds into a non stick frying pan, and place over high heat for about 5 minutes. Some seeds will "pop", and some will toast. When you have a tasty aroma, remove from the heat.

Bring the apple juice up to the boil in a saucepan and add the wine and amaranth seeds. Bring back to the boil and simmer for about 20 minutes. At this volume of liquid to seeds, there will be some juiciness left with the seeds.

Use as necessary in main courses, dessert courses, or breakfast dishes.

To serve

This is a basic "how to" recipe. Use amaranth as a component of other dishes such as Amaranth Beany Bake.
