Chicken in coconut milk.

Country of origin: Madagascar.

A traditional chicken dish from the Indian Ocean Islands.

Ingredients are for six to eight portions.

Ingredients

1 kg
chicken breast meat
2
medium onions
2
cloves garlic
2
tomatoes
5 cm
root ginger
1 400 ml can
coconut milk
to taste
salt and fresh ground FAIRTRADE black pepper

Method

Preparation

Cube the chicken meat. Skin and finely chop the onions and the garlic.

Slice the tomatoes.

Peel and grate the root ginger.

Cooking

Fry the chicken in a little sunflower oil until well browned all over. Add the onions and garlic and fry until turning brown.

Add the ginger and tomatoes and fry briefly.

Add the coconut milk, and adjust the seasoning to taste.

Simmer for 20 to 30 minutes.

To serve

Serve with FAIRTRADE brown rice and a green salad.

Variation

Add a little hot spice.

Use fresh coconut for better flavour.
